Need a quick and easy St.Patrick’s Day recipe that’s healthier than green cupcakes? Here’s your solution!
These potatoes are super simple, and you can serve them along side practically anything, so they’re a great solution if you want to be festive, but you aren’t a fan of corned beef. I also love that they get their green from peas instead of food coloring-a nice, nutritional boost!
This recipe comes to you courtesy of Michele Erdvig, a certified Ireland expert-who better? I’ve noted the adaptions I made, which were minimal.
Michele’s Leprechaun Mashed Potatoes
6 Large potatoes peeled and cut into chunks SFM Note: We used a full 3lb. bag
8oz. frozen peas SFM Note: We used 2 80z. bags
Salt and pepper to taste
A knob of butter (optional)
A Tablespoon or two of milk or cream (optional)
Put potatoes in a pot and cover with cold water. Bring to a boil. Reduce heat to medium low and cook for about 15 minutes or till tender. Steam or cook peas till just tender. SFM Note-We just partially thawed the bag. Do not overcook peas or the color won’t look right.
Drain and then mash potatoes with salt & pepper to taste. SFM Note-We added butter at the point, because….butter…. Puree peas in a blender or food processor. SFM Note-We just used our mini chopper. If you prefer the peas a little chunkier, mash them thoroughly. Mix peas into potatoes. Add milk or cream, if needed. Put in serving bowl and add a knob of butter on top. Serve hot. SFM Note: Henry ate a bowl in place of dinner. The oldest refused to touch them. My husband and I ate them under a really amazing stew he made (Maybe I’ll share the recipe for that another time….), and we both ate ourselves silly. I hardly ever give him proper credit around here, so I’ll also confess that he did 90% of the work prepping and photographing the potatoes. He should really start a blog……
