On a chilly day like today (and the last/next 100 days…) I love a hearty bowl of soup.
This one is our new favorite. It was inspired by leftover potato bar fixings from a church dinner and a great deal on bacon at Albertson’s.
I knew it was a winner when Henry declared it, “Actually not awful,” and the oldest, who normally exists on a diet of air, water, and junk food gleaned at school, finished his bowl and asked for seconds.
I think you’ll love it, too! The original recipe is here. My version eliminates the sour cream in favor of a thicker roux, more cheese (Mmmm….cheese), and real butter. I also leave the skins on the potatoes, which I think adds flavor. The real secret, though, is to use high quality bacon.
Here’s the recipe:
12 slices good quality bacon
1 small bunch of green onions, chopped
3/4 C. butter
6 C 2% milk
3/4 C. flour
6-7 small/medium baked potatoes cut in chunks, skin on (These should be already baked; leftover ones work great. Do make sure to refrigerate them in between baking them and using them in the soup. It isn’t safe to leave them out).
1 1/2 C. Shredded cheddar cheese
Cook and drain the bacon. Crumble and set aside
Melt the butter. Whisk in flour and milk, stirring constantly. Add the onions and potatoes. Bring to a boil, stirring constantly. Reduce heat to medium and use a masher to slightly mash the potatoes. I leave the skin on.
Reduce heat to low and stir in bacon and cheese. Season with salt and pepper to taste. You can also reduce/add cheese and milk depending on how thick you like your soup. Serve with extra bacon bits, green onions, cheese or sour cream, if desired.
You can get Hill’s platter bacon at Albertson’s for just 2.99 through tomorrow with the in-ad coupon from their weekly flyer. If you haven’t already used it, be sure to sign up for your 5.00 coupon, too! If you try this recipe, I’d love to know what you think of it!
Update-This post from 2013 was originally part of a promotion with Albertsons. It’s a totally awesome recipe, and I wouldn’t hesitate to get bacon at Albies so you can make it! I just don’t know if it’s currently on sale-so that part is on you! 🙂
