As promised, here are a couple of easy take-alongs if you’re headed to a barbecue or picnic today.
If they don’t look promising, Costco makes a mean potato salad.
Red, White, and Blue Spinach Salad
O.K…..Spinach is green, and this is so simple it may not qualify as a recipe, but it’s tasty, and the color combination looks patriotic and festive.
Fill salad with washed and dried spinach (bag or two depending on gathering size)
Top with one pint raspberries, one pint bueberries, and one small container of feta cheese.
Add 2 or 3 green onions, finely diced.
Serve with any good bottled raspberry vinagrette (We like that brand they sell in the produce section above the lettuce mix, with the skinny neck. I can’t think of the name right now).
My Mom’s Macaroni Salad
Mom would like you to know she doesn’t use a recipe, and she guessed at all the quantities. She says not to sue if it doesn’t turn out. Got it??
1 lb. small shell (salad) macaroni (or more if you want).
1/2 C-C Mayo (start with the smaller quantity, and add more if you think it needs it)
C Cubed cheese or substitute 2-3 cans of well drained tuna
C Frozen peas
3 Green onions finely diced (You may want to start with less, depending on your feelings about onion).
Salt and pepper to taste
You could also stir in a little sweet pickle relish. My mom leaves it out because my sister hates pickles. Stir it all together. You want all the ingredients to be well combined, and the whole thing to be sort of mooshy. I know mooshy doesn’t sound appetizing, but I promise it’s delicious. This has been my mom’s standby for years, and people complain if she doesn’t show up with it.
