This recipe comes from my friend Robyn, who got it from her friend Amy. Try it and you’ll see why it’s one of those, “I have to have this recipe,” recipes.
Now, I know the list of ingredients is a little on the long side (I have never bought watercress in my life), but you really don’t have to do any prep work other than washing and chopping and most all of it can be made ahead of time. It’s totally filling, so it could easily be a main dish for a night you don’t want to heat up the kitchen. It would also be perfect to prepare ahead for a shower or luncheon where you have to take a dish.
Chop or cube all of the following: 1 large head red-leaf lettuce, 2 heads romaine, 1 bunch watercress, 1 large cucumber, 6 tomatoes (or equal amounts cherry/grape tomatoes), 1/2 green pepper, 1/2 red pepper, 12 oz. jar marinated artichoke hearts, 1/2 lb. gruyere cheese, 1/2 lb. prosciutto (you can sub in bacon), 1/4 lb. hard salami, 1/4 ham, 3 chicken breasts, 1/2 cup black olives, 3 eggs, 2 avocadoes
You can prep everything but the avocado in advance and store it separately in baggies or tupperware. Just before serving combine it all and toss with any good, bottled italian dressing (don’t do it until you’re ready to eat, or you’ll have mushy salad-gross). Robyn says she uses Annie’s.
This makes a Huge amount of salad. If you’re just serving your family, you’ll want to adjust it down. I think you could also easily switch out ingredients depending on what you have on hand. You definitely want the avocado, though. Btw, Heather over at Queen Bee, just did a post on Grocery Outlet. Somehow I’ve never been there, but apparently it’s the place to go for bargain prices on fancy cheeses.
