Have I mentioned lately how much I love my readers? A couple weeks ago, I put out a plea for more easy, tasty weeknight recipes, and just like that-one showed up in my inbox from reader Niki ten minutes later. Stay tuned for my post on how I’d like a nanny and a new car. Just kidding….
I actually had all the ingredients for Niki’s recipe on hand, so we tried it out, and it was yummy! Both my husband and kids ate it all up. Sadly, I forgot to take a picture, and my family refused to reenact dinner for me, hence the hideous clip art. Try the recipe anyway. It’s a good one. Thanks, Niki!
Niki’s Southwest Chicken and Noodles (I made up the name)
Cut up boneless skinless chicken breast and cook in saucepan
Boil noodles or make rice enough for your family
1 can cream of Mushroom (Chicken, Celery, or any other cream soup) *
1/2 can milk
1/2 can salsa
1 can black beans optional
1 can corn optional
serve sauce over noodles or rice
*I am a cream of soup gal. Maybe it’s because all my ancestors came from casserole country (that would be North Dakota), or maybe it’s just because it’s soooo super tasty. If you’d like a healthier version, there is one right here. It’s made in the crockpot, and you can freeze it. I would never do this, but I know some of you are much better than I am. It’s o.k. The recipe comes from the blog, A Year of Slow Cooking. If you’ve never discovered it, go there now. Blogger Stephanie spent 2008 using her slow cooker every, single day! The result was a year of tasty, easy recipes, along with a few funny clunkers, too. She doesn’t update every day any more, but she does have new posts on occasion. There is a yummy looking pulled pork one up now. She also just has a funny writing style that makes me laugh, and her recipes are gluten free because she has a child with gluten intolerance.
